Not too long after settling in New Mexico from the East Coast, we found ourselves seduced by the delicious aroma that dances in the wind during "Hatch Season." Call it coincidence or fate but our very first house in the "Land of Enchantment" happened to be situated directly behind those big roasters that hold the one magnificent job of roasting Hatch green chile day after day. From late summer through early autumn we were completely enticed by that aroma, the perfect smoky sweetness that is so distinctive of chile roasting season in New Mexico. The delicious smell wafting through the air drew us in on a daily basis. Some days we would run over to try the medium version and some days it would be the melt-your-face-off hot variety. These peppers had heat AND flavor! We just kept coming back for more. Running home with our freshly roasted chile in tow, we would pile it on every dish we could think of!
Eventually inspiration struck and we decided to craft a gourmet, limited batch ketchup, starring those fine roasted green chile peppers from Hatch, New Mexico, and pairing them with only excellent ingredients. We called it Hatchup Katchup® and now we just pile THAT on everything. We are sure you will too!
